One knife to replace many
This is an extremely sharp chef knife made from super sharp stainless steel. I’m no knife technical expert, but I guess this has something to do with the 63 Rockwell hardness, giving the unique cutting edge.This knife works excellently as a general all purpose knife, and works very effectively on all foodstuffs meat, fruit and veg. This knife is good enough to replace almost every knife you have in your cutlery drawer Really there’s no need to buy a knife set as such for the home, as this knife is good for most jobs I’ve found.The knife comes in a nice presentation box for gifting, or just for presentation and storage, which is nice, but I would have referred a more robust full length knife sheath, rather than just a tip sheath, over the presentation box, for safety and arrogate reasons.In terms of ease of use, the handle is nicely weighted and designed and fits in my hand well, and as such it is comfortable to use. A good prep knife is a must have in the kitchen, so this knife is ideal for my purposes. If you have littles ones who may access the cutlery drawer, I suggest you keep the knife in the box, or out of reach, to stop any accidents to little fingers, with it not being fully sheathed.So overall great knife and well worth the investment. I’m deducting one star though because I think it should have a full sheath protector, if it came with one I would have given it five stars. Other than that very happy to recommend for its versatile utility in the kitchen.

Look after it and it will last you years…
As a hairdresser I always look at the Rockwell hardness scale of steel for my scissors. The same applies for knives.Rockwell hardness refers to how resistant a metal object is, such as a knife blade. It’s a measuring system testing and determining how hard and strong steel such as that used in knife/scissor making truly is. To accurately express metal hardness, engineers use a standard process called Rockwell testing.Higher the number, harder the steel.Higher isn’t always better though. Depends on the use of the blade.As a rule of thumb, softer steels such as those rated at 45-50 are more durable and withstand impact better than hard steel rated at 60 and above. Hard steel blades hold their edge longer than soft material. However, they can be brittle and tend to chip or even shatter under impact.This has a Rockwell Scale of 63C.Industrial knives will fall somewhere along the Rockwell scale’s C schedule, with a number from as low as 40 to as high as 65.A high Rockwell C rating means the tested steel is high-strength.Highly durable steel requires sharpening stones made of ceramic. Once a fine edge is set on high RC-rated knife, it keeps its hone well until some other hard object contacts the blade, which could result in the blade chipping or even shattering.So don’t drop it or try to cut through bone.There’s a tradeoff between using soft steel knives and those with a high RC scale rating. Hard steel will last longer than soft materials between sharpening. However, when hard steel products lose their edge or suffer damage, they’re more difficult to repair. High RC-rated steel knives can also be more expensive to replace.Knives which may encounter more rough treatment or be used by student chefs may benefit from a lower Rockwell rating. This means that whilst blades will lose their edge slightly more quickly, they are less likely to chip or become damaged when stored incorrectly or used on unsuitable surfaces such as stainless steel worktops.So now you know all that you can decide if this is the knife for you. If you want one that you can chuck in a drawer for everyday use then this isn’t for you. If you’re prepared to look after it and appreciate a hardwearing good cutting edge then this is perfect for you. Hence why hairdressers can’t drop their scissors on a hard floor…Feels great to hold. Extremely sharp. Arrives in an ideal box and tip blade cover to protect it. Great price for such high end steel. I hope I’ve helped you make a decision ☺️

Rusty blade after 1 week DO NOT BUY
It’s a same the knife has started to rust after 1 week. Do not buy if you want it to last. Too much hassle trying to return it. Should have been given a full refund.

KBK Chef Knife Seems Sharp Right Now
It’s super sharp right now, then again any new knife seems to be like that for the first few uses.It’s the price that’s a little on the high side that’s my only issue with it.Comes boxed and makes a good gift idea that’s true.The knife itself cuts into meat, chicken and fish well. Vegetables no problems either, feels a weighty knife and looks good.

Excellent, Well Weighted Knife, An Enhancement To Any Knife Rack
After many years working in the meat trade, I knew the advantages of preparing for my working day by having good sharp knives. Subsequent to sharpening, I would test my blades by shaving some hairs from my arm. The KBK Chef Santoku forged kitchen knife isn’t quite at that level of sharpness but it’s pretty close, and when it comes to dicing and slicing, this knife is all you’re going to need.This is a great meat and veg preparation blade with a decent weight behind it, whilst still achieving a good balance between handle and blade, which for me, is the sign of a well-manufactured quality knife. The stainless steel blade has some mighty impressive letters after its name with SUS304 denoting the steel is of a Japanese JIS standard and is widely used.The one important thing apart from sharpness in any knife is how it sits in the hand during use and a good quality knife should give you not only a feeling of comfort , but also convey a sense of safety in its use. The Santoku knife, for me, achieves both. The glass fibre composition of the handle makes it easy to sanitise the blade between preparations and also makes for an overall attractive look.With blades of this quality it’s important that you play your part in its welfare which means not just chucking this in the cutlery drawer between uses but finding a safe place for its storage. I intend to return mine to the safety of the box the blade arrived in. The use of a sharpening steel to finely hone your blade will also enhance your cutting experience.In summary, this a nice sharp, quality instrument that will serve you for years to come.
