Q: Can I select the colors for the mixed box?

In my box, it was a set of coordinated colors. There was not an option of choosing different colors.

Q: Can you sew with them? Trim clothing?

These do not have finished edges - so if you were going to use them as trim you'd need to either fold or roll the edges first.

Q: Would I be able to rip this ribbon length wise? Not cut but rip it to have frayed edges?

In theory you would. I cut and then ripped mine about two inches and it ripped and frayed beautifully. But you would also have to be very careful if you wanted to rip it the entire length of the ribbon to get equal pieces. I’d worry not being attached to a wider piece of cloth to start with that it would eventually rip a thinner and thinner piece and would taper off. The edges of this ribbon are already frayed wonderfully, that’s why I purchased for bridesmaids bouquets.

Q: Would this be a good option to use for hair?

I’m not sure exactly what you mean, but you could put a bow in your hair, or wrap it through large braids.
