Q: Can I use this on Alcantara?

I wouldn't. The spray is made for leather. Not a synthetic look alike. Synthetic vinyl shouldnt need protection it is made to be its own protection. Leather is porous therefore absorbs, vinyl is not porous therefore it is easily wiped clean. Dirt and water will sit on the surface of non porous material.

Q: Has anyone used this on suede car seats?

Q: Does it protect from salt?

Hello You did not explain what you mean salt? If you mean marine uses then we have a dedicated product for the marine industry and it is TEX-11 E (high level) designed for marine environment.
