It would have been even better with an index
I'm still at the reading (and enjoying) this book, so haven't made anything yet. Really appreciate that it includes information/instructions for slow-rise bread. A lot of information about culturing/fermenting. Well organized, interesting read. It has a helpful table of contents. It would have been even better with an index.

This is a great book. It has a lot of good information about old fashioned cooking and how to ferment food.

Italian grandmas cooked in a very different way
I bake sourdough bread, pizza, focaccia, etc twice a week and was intrigued by the idea of using in baking rejuvelac and other fermented food I'm currently producing.I was disappointed by the recipes and, being Italian, frankly exhilarated by the "pizza" one.One-third of the book is an appendix about the author's (and his guru, the late dr. Price's) nutritional philosophy. Some wisdom drops:-you don't have to worry about cholesterol and saturated fats at all, because they're not bad;-you don't have to limit red meat, fats and salt consumption;-soy is more dangerous to you than the Ebola virus;-children should eat fats, otherwise they will not grow;- if you're veg*an, you're a lunatic or a jerk, and you'll die (I'm bookmarking this) and you'll be the ruin of entire humankind and your children, and grandchildren, and grandgrandchildren to the seventh generation will suffer from any deficiency known to science, most of all a narrowing of the cranial structures (that, I'm guessing, will lead to a brain explosion, just as in that old urban legend about dobermann dogs). So, veg*ans should not breed, but that's not a problem, since they have dire difficulties in doing so (really?)-you have to soak and sprout everything before eating (peas, nuts etc);-you must not use a microwave oven.The author and his clan claim to have quitted their former vegan diet due to severe health issues, and are now thriving on this healty and rich regime. I therefore suppose that the author's pictures in the book were taken when he was ill.My fault. I should have read the author's biography better. I happily admit I'll use this book as a starter in my fireplace.

Traditional cooking
Great book to start you on a truly good and wholesome path to good health at little cost. I now use kefir grains (both water & milk).. With the milk kefir grains I make yogurt, greek yogurt and cream cheese. It is so easy and so nice!! So now will try other recipes.
