Pearl River Bridge Mushroom Flavored Superior Dark Soy Sauce, 16.9 Ounce (Pack of 2)

I bought my first huge bottle of this from Wegmans and it lasted a long time. They stopped carrying it and was disappointed when I needed more.It is umami amazing.I primarily use it as a dry steak rub after I've added light kosher, ground pepper, and powdered garlic and let the steaks sweat in paper towels for 1 to 2 hrs flipping here and there.It makes the meat brown when coating them. Easy to read. :)I sear the steaks and butter them both sides. When they're just about ready on their second to last side I pour another light amount of this soy onto the steaks and coats that side. Then flip for the final sear. Pull the steak and while they rest, I add enough water to rip and clean the pan and boil it all down into a reduction of leftover buttery char dark soy.I bring that to a preferred reduction and it makes an amazing dipping sauce by the time the steak is set up.It's a delicacy.I used this soy once with marinating chicken thighs for the grill and they were out if this world the first time even without playing around with method timing and technique. That's a whole other story.In the end, It's a strong soy. It needs to be respected. It's not a soy sauce you would pour into an eggroll and eat straight.It is a cooking soy sauce and it is very strong.I really recommend trying this soy. It compliments and finishes seared meat very well.
