The Primal Low-Carb Kitchen: Comfort Food Recipes for the Carb Conscious Cook

LOVE this cookbook!
I went back and forth in this one. I finally checked it out at the library and fell in love. This book is amazing. I've made most everything in it and have adored it all. My family loves all the recipes except the ones where I sneak cauliflower in. They catch me every time. Whatever, this low in carbs just means more for me!I keep my carb limit at or below 30 grams a day total and this cookbook makes it super easy to eat VERY well and not go over my limit. The recipes are easy to follow. We have a strict grocery budget and while low carb isn't always cheap these recipes don't call for crazy expensive ingredients. I think the strangest thing I've bought so far was the porkrinds for "breadcrumbs." I'd never eaten one in my life! So we stay well within our budget with these recipes.Like I said before, my family loves the recipes. My little kids, the teenager and the husband all enjoy the recipes I've made from this book (except the cauliflower ;) ).

I love this book!
I've been following Kyndra's blog for years and always loved her recipes and amazing photos. What I really appreciate is that most of the recipes are savoury and all are easy to make. This book is a must-have for anyone following a healthy low-carb & primal diet.

Ok, ok, I was wrong. So sue me.
I was so upset when I got this, admittedly very beautiful, book. I suddenly realized that either all of my 100s of hours of scouring the Internet for information & recipes for diabetic cooking amounted to a mountain of misinformation, or that I had simply misunderstood that information. This book was not only useless to me, it was potentially dangerous as there is a newly diagnosed type 2 in the house, for whom I cook.Because it just wasn't possible that every one of the recipes in this book seems to fit with what I'd learned about diabetes. After all, I decided, they aren't aimed at diabetics, right? Plus they sound TOO GOOD TO BE TRUE, right? Therefore, I had wasted my money... OBVIOUSLY. Too good to be true, indeed.Well, well, well, turns out I was wrong. This is a wonderful book, filled with delicious recipes and perfectly usable for a diabetic. I haven't read every single one, so I might have to make and adjustment here or there, but, oh, my, my, my, my, my am I one happy camper. Thank you so much for this book.
