We like to make Khao Man Gai, which involves boiling a chicken and then hanging it up to dry and cool to get the best texture on the skin. The dish is served at room temperature.These work great to hook the chicken under the wings, and hang the chicken from the side of the pot for boiling so it's not bouncing around at the bottom of the pot. It makes it really easy to pull the chicken out of the pot without burning yourself. Can't emphasize that enough - using tongs to pull a chicken out of a large pot without damaging or getting splashed with boiling water is challenging, even if you're tall. This is also very handy if you plan to boil more than one chicken in the pot at a time, or really anytime you're making stock from whole chickens.After boiling we hang the chickens by these hooks over a standard baking sheet with sides to let them drip dry. We hang them from our overhead microwave/vent hood handle.They are appear very solidly built for lifting the 3-4 lb chickens we're using. The hook points are properly sharp.I can imagine these would also be great for hanging up ribs or a roast that has been dry rubbed, so it gets a chance to properly air dry on all sides before being barbecued or grilled.There were three meat hooks in the package, which is pretty much a lifetime supply.
