If your tires are 700x23 or 700x25 which are typical on road bikes these will fit properly. I'm guessing your tubes say 700x18-23 which means they will properly fit tire widths from 18 to 23

yes. 700 is only the diameter of the tire. u need another number. this depends on the width of your tire. the thicker and wider the tire, the bigger the number. this number is usually found on the side of your tire. ei; 700x23(narrow), 700x38(wide)

Q: My first 2 valve cores came off when i unscrewed the presta adapter. what am i doing wrong? separately, what is the purpose of removable valve cores?

Came off? Presta adapter? It's pretty simple they are designed to be able to unscrew and tighten easily with your fingers to be able to fill with air and to also be able to easily deflate completely, normally their is no need to completely remove the valve. All tires pretty much have removable cores (valves) just the way they are made always have been, comes in handy if you have to replace or in the case of bicycle tires makes it easier to fill tire with sealant. So if you are saying cores came out when you hooked up an adapter makes me wonder what kind adapter you are talking about. Normal presta tire pump air adapter fittings would not do that as they are simply a rubber collar that fits over the valve and you flip a lever that tightens the seal, so if you are having a problem it is with your adapter
