Over 9 months of daily heavy use and still my best knife!!
9 months after using it on a daily bases heavily! it's still the sharpest tool in the box :)the maintenance that i've done is sharpen after every use, and every 3 months i've sharpened it using a whetstone. even now with a little over 3 months since the last stone sharpening i can shave using the knife!!!very well balanced, glides through the ingredients rather than just cutting, solid like really solid it only chipped once (i hit it on metal edge by mistake), slicing 10 pounds of chicken breast to 1 mm slices was never easier! as a plus cutting onions using this knife when properly sharpened it doesn't make you cry.Truly love this knife, and i would recommend it to anyone.worth mentioning the price went up from when i bought it for 99+tax still it's worth it, it's the last knife you will buy and the jack of all trades.* I also have a set of victorinox knifes, they are perfect for a budget and everyday restaurant use, and they are dirty cheap! but some of the best. They don't compare with this one but for the price you should consider them.* Japanese knifes are definitely much sharper but not as comfortable to use as this one, maybe it's mental because they are seriously expensive so i tend to be way more careful!anyway just buy it. it's the best 8" chef knife knife zwilling have produced

I regard the forged Henckels as the best you can get
Since I was just little lad I have always been fond of knives--man's most basic, most fundamentally important tool. Our first tool. I own scads of knives--utility knives, hunting knives, pocket knives, kitchen knives, fixed-blades, folders, automatics, etc. For kitchen knives, I own Wüstoff and Henckels, and I buy only their top-of-the line forged blades.I regard the forged Henckels as the best you can get. Our wedding present many moons ago was a Henckels 12" carbon steel chefs knife that is still a super-sharp workhorse. We use their Four Star 10" and 8" chefs knives every day (as well as their 4" and 3" Four Star II parers). This Four Star II 6" chefs knife is the latest addition and it's taking over the jobs previously handled by the 8" because it is so perfecty balanced in the hand, the substantial perfectly shaped handle, the shorter blade length but a blade that if anything feels more solid and robust than the 8" model. It is a marvellous blend of practical utility and beauty. It is a pleasure to use and a pleasure just to behold it lying there on the counter. Absolutely worth every cent.

I am so happy with this knife that I will be replacing the rest of my knives with more sizes .Very sharp , holds the edge and comfortable to use

Awesome knife!
This was a gift for my in-home chef of a wife. She is awesome at cooking at actually knows how to properly hold and use a knife to chop effectively. This sucker is sharp... and balanced... and just works well. She absolutely loves it. As a fellow reviewer said, Throw your one tiki man Henckels in the trash and get these. I own a set of the one tiki man Henckels made in China, and while they get the job done for your novice guy like me, even I notice a huge difference using these knives. We are slowly replacing the set as I can afford to, since, yes, one knife is worth a whole cheap set, but these babies will last a life time when taken care of. So far, still sharp and no staining like the cheaper Chinese ones. Would totally buy again, but hoping I won't have to for another 30 years or so...

Most versatile and balanced knife I've ever used in the kitchen
This brand and model knife was recommended to me from a friend whose family are professional butchers in the Cleveland area for over 40 years. Have had this knife for over a year now and am NOT disappointed. Comfortable, durable, and holds an edge better than anything else we own, and it didn't break the bank when we purchased. Recommended a good diamond sharpener to keep it honed between uses.

Superb knife!
This knife is everything we expected, having had good luck with Henckels knives before. From sharpness to balance, it is as good as advertised. Absolutely first class.

Absolutely the best!
This is the absolute best knife I’ve ever had in my hand! ..razor sharp is an understatement - you could shave with this knife. I highly recommend buying a sheath.. they’re not expensive. surprised it didn’t come with one. It has a nice balanced weight to it. I highly recommend the Zwilling J.A. Henckels 8-Inch Chef's Knife.
