Uncured is the way to go. This is AMAZING!
Wow...... I've purchased more than my fair share of salami's and cured meats, and usually find that they taste almost identical. That is not the case here. This uncured salami is SOFT and chewy and moist. It took me a few minutes to brave up to it, but once I embraced it I was able to appreciate the unique texture.The taste is deep, savory, earthy, and absolutely delicious. None of that oily greasy heartburn feel seeping out of it. Just tender flavorful magic. Strip the casing before slicing, or peel it off w each slice as it will hold it's own if you attempt to chew through.If you want to try something truly unique, this is it. I will be purchasing this many more times.

oh wow the smell is so bad
Just got this product, was looking forward to it but when I opened the package the strong rotten smell was too powerful. Is it supposed to smell like it's rotten? I can't eat it, and I got two packages. Very very disappointed.

Beyond my expectations
I had and issue with the first order I placed. It had to do with incorrect handling of product I think or storage..on postal end. But after contacting the seller he sent a new package with some delicious bonus meats in it for my trouble. He was wonderful and the flavor and quality of the meats exceeded all my expectations.

first one was nice and firm, nice taste, second one was slimy and not as flavorful

Spoiled
The salami was moldy and smelled rancid when I opened it. Threw it away. I also bought some Ndjua from them a month ago. That was generally ok but seemed just a little off color and flavor wise.I'll stick to the other Chicago based producer (Tempestra). Everything I have gotten from them has been great.It is as close to the stuff I have had in Italy.

The REAL deal!
When I vacationed in Italy a few years ago I ate salumi nearly every day because it was that good. In those two short weeks, I probably consumed more than I previously had my entire life. I'm a native Chicagoan, and there's plenty of authentic Italian food to be had here. Greg Laketek "trained under the best" and he brought those secrets back to Chicago. IMHO the best salumi you can find here in the USA by far. Thank you Greg for quitting your day job, pursuing your passion, and bringing it home here to Chicago!!!

Moldy bad smell
Moldy and bad odor. I got fooled, I had bought this because it said it was made in San Francisco. But it is the same moldy sausage I threw in the garage last time. The smell of the casing is horrendous.

Great salami, but didn't keep well.
I have ordered this before from the actual company, not on Amazon, and it was fabulous and lasted a long time. Unfortunately, it was not so this time. Our catering job got delayed for a few months and usually this keeps for a few months, but I had to throw it all out. I was so disappointed because I couldn't show others how good this product really is.
