Q: What is the expiration date?

First off, the flour doesn't "expire". Flour comes with a Best By Date, but that is not an expiration date. People often confuse the two, which leads to a tremendous amount of food waste. Flour a week past its Best By Date is completely fine, whereas foods past their expiration dates should not be used. The FDA requires Expiration Dates on fresh dairy products and infant formulas. That's it. As to our current inventory, it is quite fresh - we picked it up from the mill last week. I won't put a specific date on this response because Amazon will continue to display this Q&A for years, and in a few months, the response will look like we are selling product well past its Best By Date. You can rest assured, with as much flour as we sell, flour from HonestFoods is quite fresh indeed. I hope that helps!

Organic Type 00 Normal is an artisan pizza flour that features a gluten structure that is both soft and strong, and can hold up during a long, cool fermentation. Made with specific varieties of Hard Red Winter Wheat, this organic flour will give your pizza a nice thin crust with a supple crumb that melts in your mouth. Also works great for artisan flatbreads and hand-made pastas. Our pizza flour has 11.5% protein. So, lots of gluten.
