Q: Where is the cacao past grown?

It is grown in Ecuador. This Cacao Paste is the Arriba Nacional variety. Sorry that is not more clear, it is on the bag if you zoom in.

Q: Is this Ceremonial cacao?

Our Arriba Nacional Cacao Paste is minimally processed, small-batch, single varietal, 100% Raw Cacao sourced from a single farm in Ecuador. We consider it to be, by far, the best cacao available on the market and most definitely Ceremonial Grade Cacao. Here is more information directly from our website: Wilderness Poets Cacao Products are made from the deeply flavorful, heirloom variety, Ecuadorian Arriba Nacional cacao beans. The interesting thing is our Cacao doesn't come from farms or farmers. It is wild, heirloom cacao. Grown in high–elevation highly mineralized volcanic soil. Watered by rain or deep mountain spring water, the trees are never irrigated by potentially contaminated rivers and streams. Wild harvested and brought down on donkeys. Mature, ripe cacao pods are harvested from trees that are between 30 and 80 years old. The cacao pods are hand selected for quality beans, which are sundried (never gas dried) then lightly fermented to bring out the rich, aromatic flavor. Arriba Nacional pods are hand selected and never acquired from aggregators thus no possible cross–contamination.

Q: In the summer my house gets 90+ degrees. Can I refridgerate the product?

You can certainly refrigerate the Cacao Paste, but it may cause a slight discoloration.

Q: Is this product the same as solid unsweetened chocolate? Are they interchangeable?

I use it the same way as solid unsweetened chocolate. If I can keep temperatures low when making my homemade chocolate, that’s better to retain the raw nutrition.
