I don’t understand why Eden stopped producing mochi, but it has left a huge impact to the industry.This rice mochi is excellent but it is not kosher.What would it take to make it kosher.I can help with that if needed.

This was my first time trying mochi and I loved it. I decided to try brown rice mochi because its fairly healthier than typical mochi, but I was worried that it wouldn't be as good. I was wrong, this mochi has a nice "nutty" or "toasted" flavor. The texture is excellent, when you bake or fry mochi it becomes chewy on the inside and crispy on the outside. I tried the mochi baked which was very good, I made mochi crust pizza- I almost liked it better than regular pizza and I attempted to make zanzai, however I think that you need white mochi for that recipe because the brown rice mochi didn't hold up as well. Regardless of that this is an excellent product, and I highly recommend it to those who like mochi and those who have not tried it.

Agreeably bland
I really like this product. It's agreeably bland, which means that I can pair it with many different foods. This morning, for example, I toasted (450° in my toaster oven) it and munched it along with tuna, avocado, fresh basil, and fresh dill. Other times, I've enjoyed it with sardines or a bit of roast chicken and fresh basil. As a dessert or evening treat, it's quite yummy with almond butter and whatever spices you like. I've drizzled vanilla extract, or cinnamon, or cocoa powder -- or all of them!I gave it only four stars instead of five because the quality tends to vary. Sometimes it's really fresh, while other times it's rock-hard -- as though it's been sitting in the warehouse for a while. I've discovered that regardless of the condition, it helps the texture and flavor A LOT to freeze it first, then defrost and use.This is the only unadulterated mochi that I know of; all the others have gimmicky ingredients to make it more "commercially viable." Some years ago, there was a truly superb mochi -- far better than this in every way -- made by Grainaissence (sp?), but they're no longer in business. So this mochi is pretty much it!BTW, it's also available on the Vitacost website, for a better price.

Nice texture but the flavor depends on how you use it.
Not as "sweet" as I would have thought. It tastes mostly like nothing and a little like soy milk. It's got a very pleasant texture and is filling so it's definitely useful if you're dieting and trying to cut out white rice and bread from your diet. I might try this with a little cinnamon and maple syrup in the morning -maybe even nutmeg or pumpkin spice. It should go well. If you want to bake it in a toaster oven, I tried it at 400° F for 8 mins. It came out hot, so about 2-3 mins cooling is a good idea.
