Khorasan kamut is an old variety of wheat that's much higher in protein than most newer varieties. An entrepreneur pegged it as suitable for North American growing conditions, gave it an exotic-sounding name, and patented it. It's not Frankenfood, and kamut bulgur is about as processed as pasteurized milk. It tastes much like the bulgur in Near East bulgur pilaf mix, which has a milder flavor than Bob's bulgur.I found this product at a wonderful Syrian store a few years ago. It was out of stock when I when I went back to buy more, and I've been hunting for it ever since. If I didn't have to order two 4-pound bags at one go, I would never be without it.
