It is not to sour form the preservatives and stays fresh for quite a long time in the fridge. The color is a bit on the toasted garlic side (even though it is not cooked) but at least it is not brown and ugly. It tastes close enough to fresh garlic in soups and pastas and even makes a serviceable homemade garlic butter cheese bread. It definitely smells like fresh garlic when you are cooking with it. I just wouldn't use it in anything you don't cook before eating. For that I feel you need actual fresh garlic to pull of a dish like that. This is definitely going to be a fridge staple for me because it is so good and makes cooking with garlic way easier.
