## Description

Pasta Giuseppe Cocco is the most traditional Italian pasta made in Fara San Martino, Abruzzo. In 1916, at the age of 14, Domenico Cocco began working in a pasta factory. Over the years, his job turned into a passion and he soon learned the techniques and tricks of this art from the "Mastri Pastai" (Pasta Master). He dedicated his life to this fascinating job, guarded all his secrets and handed them over to his son Giuseppe. The old "Mastri Pastai" claimed that four ingredients are needed to make good pasta: mountain wheat, spring water, clean air for pasta drying and processing technique. In 1944, Giuseppe Cocco began working with his father. Together they had to go through the ordeal of finding the pasta machine parts, covered by the debris of the heavy bombings that destroyed Fara San Martino. The machines have been reconstructed and put back into operation. These machines, memories and tricks are still used by Cavalier Giuseppe Cocco to make traditional pasta, as good as it was then, in Fara San Martino. The "Mastro Pastaio" pours the durum wheat semolina into the kneader and slowly adds the crystal clear spring water, obtaining a homogeneous and thick mixture. The mixture goes through the bronze die that gives pasta the necessary roughness, which then enhances the flavor of the sauces. The 1910 winder rolls out the dough and its wooden rollers like rolling pins to the desired thickness, creating the nests. The noodles get their final shape and the most complex and delicate phase begins: drying at a natural temperature. The pasta quality, nutritional values and resistance to cooking depend on accurate and careful drying. These fully manual and traditional methods take more time and space, hence the low production quantity. However, the traditional pasta taste and taste are guaranteed.

A: This is thin spaghetti. It's the best and was recommended to me by one of the leading Italian chefs here in Naples, FL.  All of their pasta is wonderful.

A: Artisanal Manufactured by mixing durum wheat semolina and cold spring water.

Slow cold mixing, round bronze-die cutting, slow and static low temperature drying.

A: It’s four and water what needs to be kosher?

**Q: What is the recommended cook time for your spaghetti?**
A: I have cooked it and it takes at least 10-12 minutes. Check it at 10. Needs to be almost a full boil.
