Accent is a flavor enhancer called glutamate. Since 1947, generations have trusted their favorite recipes to Accent. Accent has the remarkable ability to bring out and enhance the flavors of different foods. When you add Accent to meats, poultry, fish, salads, vegetables, sauces, casseroles, soups and stews, you’ll find they all taste more flavorful. The unique and subtle taste Accent produces is called “Umami” in Japan and is described as a savory broth-like taste. The process used to make Accent is similar to the fermentation process used to make vinegar, yogurt and beer. Using glutamate goes back more than 1,200 years, when in Asia, cooks discovered that many foods tasted better when prepared using soup stock made from seaweed. Unlike salt, it has a significantly less sodium, so it can be useful to use instead of salt in some things. It's pure umami. I have found its great in soups and sauces and salad dressings. I am happy with the size of the bottle for the cost, and think it's priced fairly. This stuff works! Just be smart and don't overdo it--as with anything.
