Really only leaving this review because I saw another review that mentioned an inability to get stiff peaks; you can get them with this, but it’s perhaps a bit more finicky when going the powder route. Here’s the process I’ve found to be foolproof if you have issues:1. Boil water until it’s strongly boiling; don’t use barely boiling water2. Mix powder/water in ratio given in instructions. Stir and ensure no clumps are left3. Once it has cooled slightly, cover container with plastic wrap, leaving no air gap between the liquid and the wrap4. Leave in fridge overnight/until cooled5. For a first try, I followed my usual macaron recipe, substituting this powder mixed with water, in the ratio suggested on the package, for the same grams of egg whites I normally use. I did note that I had to macaronage much less using the aquafaba, than with normal egg whites.
