Review: Perfect for Quick and Easy Meals - For years I have been reluctant to purchase an Instant Pot. I am not quite sure why, other than being apprehensive that I would not be able to come up with enough ways to use it. When I was surprised with one as a gift, it made me realize it was time to come up with recipes my family would enjoy. When I saw the title of this book, The Ultimate Instant Pot Cookbook for Beginners, by Jodi Gutierrez, I took the plunge and purchased it. I am rarely as impressed by a cookbook as I am this one. It does not just provide tons of recipes, but also a great guide on the Instant Pot Duo Mini too! One of my favorite things about this cookbook is that it includes a 4-week meal plan. If I were to want a stress-free month of breakfasts, lunches, dinners, and desserts, this would be perfect to follow. Even if you do not plan to use the Instant Pot every day, it makes it easier to meal plan for one day, a few days or a week at a time. Another thing I love is the wide variety of recipe options. My family loves variety so I am certain this book is going to enable me to keep every meal interesting. They also have quite the sweet tooth, so I am looking forward to treating them now and then to many unique desserts. I had heard about doing cheesecakes in the Instant Pot, but now I know I can do filled apples, doughnuts, lemon curd, pudding, and so much more. Ending reliance on boxed desserts is exactly what I wanted to do. With pudding taking just 5 minutes prep time and 15 minutes cook time using wholesome ingredients such as heavy cream, egg yoks, and whole milk, I can feel good about treating my family. Speaking about the prep and cook time, the recipes provide this information which is something I love. There is nothing worse than planning a meal at the last minute and finding out it takes hours longer than you expected. I do not know about your family, but mine does not appreciate waiting for dinner! The nutritional information per serving is also provided so you can cook based on your family’s dietary plan. The Ultimate Instant Pot Cookbook for Beginners truly has something for everyone. Plenty of meat dishes, seafood, vegetable, breakfast, poultry, and more. Some of the first ones we will be trying are the healthy seafood gumbo, simple lemon octopus, teriyaki pork roast, simple Mongolian beef, Hawaiian pulled pork, and homemade chicken wings. I feel this book is going to be a game changer every day and especially during the holidays due to so many being perfect for pot lucks and family gatherings. You will not be disappointed if you get this cookbook.
