I used the book, The Perfect Scoop making the first batch of Butter Pecan. The ice cream turned out creamy and smooth and gelato-like. A couple of recommendations to guarantee a quality experience: 1. Do not churn too long. The default is 60 mins, but usually your ice cream is ready in about half that time. 2. Allow the machine to sit a few minutes completely off (without cooling on, so unplug if necessary) before attempting to remove the pale. 3. You might consider using a liquid weld (JB weld) on your screw to keep in secure. The Airmsen makes enough ice cream quickly so that you could make several batches in a couple/few hours. One last point, the Airmsen churns slowly so that less air is incorporated into your cream and this keeps the iced cream smoother, creamier with less crystallization.
