Uniformly cooks the food and allows you to shift the food easily while cooking. I do very lightly add some olive oil or avocado oil to the cooking surface before cooking. Avoid cooking anything at really high temp and you’re good to go. It will clean up easily. It’s a heavy pan and has a good sized cooking area. The lid is clear glass and sits securely on the pan. The lid handle does get hot so use an insulated mitt or cloth to lift it while cooking. I would recommend using wooden utensils to mitigate any potential damage to the cooking surface. I would recommend this product to anyone that wants a high quality cooking pan.
