I don't know if the fermentation is done naturally or if it's done industrially by introducing some kind of yeast or other bacteria to cause the manioc to ferment. You might be able to learn more by looking on Wikipedia or trying to contact Yoki directly. It's a very large food maker in Brazil so it should be easy to find online, and then look for "contatos" or "SAC" for ways to contact them. If you are concerned about fermentation because of the product being chametz you can use the sweet (unfermented) version, polvilho doce, to make cheese bread. In the U.S. it's the same product that is also sold as tapioca flour or tapioca starch. **Q: Is this the same of cassava flour ?
