## Description

With the original K&K Keramik fermentation pot, you choose top quality handmade from stoneware. High-quality kilns, excellent raw materials and qualified personnel ensure the quality of the K&K Keramik fermentation pot during production. Each K&K Keramik fermentation pot is fired at 1260°C. With its bulbous shape and deep water channel, it is ideal for fermenting fruit and vegetables of any kind (e.g. cabbage, pumpkins, cucumbers, carrots, beans, celery, onion, peppers and much more). suitable. Furthermore, it is K&K fermentation pot made of stone and therefore resistant to all natural acids. You can use the fermentation pot as a fermentation pot and as a rum pot. The quality: the 1.5 cm thick base ensures an optimal stand. The base body of the K&K fermentation pot is formed in one piece. For "simpler" garden pots, either the base body is formed from 2 parts and attached (glued together) or the base has been attached. The fermentation pot 10.0 litres is recommended for a household of 4 people. The 10.0 litre fermentation pot fits approx. 6.0kg Herb Each K&K Keramik fermentation pot comes with: - Incl. Review: Very good - Very good, worth the money. I have been using it for years and the fermentation always turned out to be perfect. I just wish the stones were slightly bigger and heavier. Some advice for sauerkraut: 1) Use 15g salt per kg of shredded cabbage 2) Use bay leaves (I add 6 for each head of cabbage), it adds a tiny taste and, importantly, the tanin in the bay leaves keeps the cabbage crunchy. 3) The water you put in the channel: boil it, let it cool down, and add a lot of salt to it. Salt prevents yeast (and other organism) to form in the channel and if the water gets sucked in, it doesn't dilute the juice in the crock. 4) Leave it at least for 4 weeks.

They are perfect for lacto-fermenting kimchi, sauerkraut and a host of other natural pickles. The crocks employ a simple but perfect design: the shape is easy to fill, empty and clean, the stones fit well and press the ferment under the brine to both encourage fermentation and keep the ferment from spoiling and the water channel around the lid rim acts as an air proof seal which allows the release of fermentation gases (carbon dioxide). The crocks are well made and aesthetically pleasing (to me). One of my crocks arrived broken. K&K Keramic’s customer service is excellent. They replaced it immediately and were extremely courteous, helpful and obliging. I received a replacement 3 days later (Germany to UK). In summary, great product, great company.

**Q: Where can I get it unglazed? I need the air to penetrate through the wall for better results.**
A: > Never heard of unglazing. 
"Unglazed" means that no glaze was used in the manufacturing of the item (it was fired without glaze). Glaze is almost always toxic, so for prolonged fermentation, particularly involving acetic acid or lactic acid bacteria like with sauerkraut, an unglazed pot is way preferable, if only for health reasons. Certified "lead-free" glaze doesn't do the trick as glaze can also contain cadmium, barium and polymers. This seller doesn't say what glaze they are using (they probably don't know). 
As for the other properties of unglazed ceramic, you need air to penetrate the vessel when you want aerobic fermentation. You can either stir it twice a day every day for a year (who's got that much time), or use wood or unglazed ceramic, then you can get away with less frequent stirring (obligatory e.g. when making fish sauce). 

I want no glaze on my ceramic if I can help it!

**Q: Please could you tell me, is this OK as a rum toft?**
A: I haven’t used them for rumtopf. They are designed for fermentation and the air-tight release of gases. Rumtopf uses high proof alcohol and sugar to preserve fruit. The jar itself may be OK for rumtopf; however, the water seal, which needs topping up, may be unecessary, cumbersome or inappropriate.

**Q: Would this pot be good for doing whole head cabbages for wrapping sarmale? How many cabbages could it fit if so? Thanks**
A: My wife uses this to put her Chinese cabbage in, she puts between 10 to 15 cabbage in at a time (depending on size of cabbage) with the rest of her spices, the weights go on top of the cabbage, water in the lip then put the lid on, they do settle a bit as they ferment, but the end result is great.

**Q: any idea why the water in my channel suddenly lands up in the pot**
A: It may have different reasons:- rapid evaporation since the pot is too warm- it is too little salt in the pot- the lid creates too fine a seal to the bottom, which can result in negative pressure in the vessel due to progressive degassing. This negative  pressure then draws the water into the pot. Place a small shards or stone under the lid so that it is slightly uneven.A detailed description can be found in our brochure on pages 10 and 11 in English

Very good, worth the money. I have been using it for years and the fermentation always turned out to be perfect. I just wish the stones were slightly bigger and heavier. I highly recommend K&K crock pots. I’ve used them for years and have both 5L and 10L sizes. They are perfect for lacto-fermenting kimchi, sauerkraut and a host of other natural pickles. The crocks employ a simple but perfect design: the shape is easy to fill, empty and clean, the stones fit well and press the ferment under the brine to both encourage fermentation and keep the ferment from spoiling and the water channel around the lid rim acts as an air proof seal which allows the release of fermentation gases (carbon dioxide). The crocks are well made and aesthetically pleasing (to me). One of my crocks arrived broken. K&K Keramic’s customer service is excellent. They replaced it immediately and were extremely courteous, helpful and obliging. I received a replacement 3 days later (Germany to UK). In summary, great product, great company.

### ⭐⭐⭐⭐ Looks splendid

Arrived well packed soon after delivery. Think that the pictures do not do it justice - looks splendid. Using it as a rumtopf (expensive - a lot of rum..!). Base about a millimetre out so very slight wobble. Only other thought is that the knob used to lift the heavy lid is a wee bit small for my large hands and perhaps could be a little bigger- however they may be limited by the pottery process- no idea. But minor quibbles. Seems a bit expensive but 5 year guarantee and suspect will last years so good value.
