The base coffee is a Caturra from La Bolsa Estate near La Libertad in the Huehuetenango region of Guatemala. The blend is further brightened with the El Salvador Pacamara varietal from Finca Las Quebradas in Chalatenango. In the cup, there is a complex, bright acidity that starts right on the tip of the tongue alongside notes of chocolate, citrus fruit and burnt sugar. Our Roasting Ethos We roast in a melange meaning that each coffee type is roasted separately and then combined at the end. This allows us to use different roast levels that suit each coffee independently. Whilst this is more complex and time-consuming we believe in highlighting the individuality of each coffee to give the best possible result in the cup. All of our blends are named after our dogs and have characteristics that match their namesake. Digby is a no-nonsense, sometimes acidic English Pointer.
