About Lodge - 100 Years and Still Cooking Originally established by Joseph Lodge in 1896 - and with over 118 years of experience - Lodge is renowned for producing the finest cast iron cookware in the world. The family-owned company, based in South Pittsburg (Tennessee), is the only remaining manufacturer of cast iron cookware in the USA. What is Porcelain Enamel on Cast Iron? After the cookware has been cast from molten iron in individual sand moulds, a glass particulate called ‘frit’ is applied. This causes the ‘frit’ to transform into a smooth porcelain surface that is then bonded to the iron. There is no exposed cast iron on Lodge’s enamel cookware. The black pot and lid rims are made from scratch-resistant matte porcelain. Why Lodge Enamel Cookware? What you Need to Know Before Cooking with Lodge Enamel 1) Wash and dry your porcelain cookware prior to using it for the first time. 2) If your cookware is accompanied by rubber bumpers when unpackaged, keep them safe and use during storage. 3) Although the porcelain (glass) finish is hard, it can be chipped if banged or dropped, so handle with care. 4) Interior protection should be used to prevent chipping if the cookware is stacked. 5) Always lift your cookware when moving it (don’t drag it along surfaces). 6) For added longevity, pre-heat and cool your cookware gradually. 7) Use oven mitts to protect your hands from hot cookware and the stainless steel knobs. 8) Safeguard surfaces by placing hot cookware on trivets or heavy cloths. Let’s Cook! It is advisable to use vegetable oil or spray on your enamel products in order to enhance both cooking and subsequent cleaning. When cooking on the hob, low and medium settings provide the best results due to the natural heat retention of the cookware. Wooden, silicone or nylon utensils are suitable. Metal tools can scratch the porcelain. Caring for Your Lodge Enamel Cookware 1) Allow the cookware to cool naturally prior to washing. 2) Although dishwasher safe, hand-washing with warm, soapy water is recommended in order to preserve the original appearance of the products. 3) Use only nylon pads or scrapers to expel food residue. Metal pads will damage the porcelain. 4) Remove minor stains by rubbing them with a damp cloth and baking soda. For persistent stains, soak the inside of the cookware for 2 to 3 hours using a mixture of 3 tablespoons of household bleach per litre of water. 5) To remove stubborn, baked-on food, boil 2 cups of water and add 4 tablespoons of baking soda. Apply the liquid to the food and use a nylon or wooden scraper to loosen. 6) Dry your cookware thoroughly before storing. It cooks well, and the sides are curved a bit more so it is easier to get roux off before it burns. My husband says that this one is made in China if that makes a difference (?). We'll see how long it lasts. I have a Le Creuset from the 1930's and it's still going strong. :)

**Q: Is it made in the USA**
A: Yes, they are made overseas, not in the USA. I've had my pan for 7 years now...and it's used weekly, and more often in the winter months. I was a bit disappointed when it came and I realized it wasn't made in the USA but decided to give it a chance. After 7 years of hard use I can honestly say it's the best pot I have ever owned! It's discolored a bit, not surprising with the amount of use it gets and all the soups stews and roasts I make in it throughout each year. But that hasn't affected the pot at all. It is just a good as it was when I first bought it. I'm going to try the 1 cup baking soda and 4 cups water trick  (boil 5 min let sit with the lid on for 2 hours) that I read about in one of the other questions to see if it will return to it's original beige coloring, but even if it doesn't, it's still going to be my "go to" pot for everything I can use a dutch oven for :-) I highly recommend this pot, even though it's not made in the USA!

**Q: Flat bottom suitable for glass top range?????**
A: It's too heavy and will scratch it. It's a shame that glass top ranges even exist. They don't conduct heat well, hold on to heat far too long after it is turned off, and of course, you need perfectly flat cookware which is usually the crappy teflon stuff rather than cast iron and stainless. The only advantage of them is that they are really easy to clean.

**Q: One person mentioned that you shouldn't heat when empty, but I want to bake bread, and it needs to be hot first. Will this damage it?**
A: Apparently artisan bread bakers are heating it empty without problem, but Lodge says fill it halfway with water, preheat, then dump the water out before baking - I don't know it that works for all, but it gets it to 212F (100C) and if you need a higher temp, perhaps do that first then dump the water out to minimize the time it's been empty before it reaches your temp.Google/search "lodge dutch oven bake bread" and look for the link to "Baking Bread in a Dutch Oven" at the artisanbreadinfive site.  The points I mention above are in the comments.

**Q: Is this seasoned?**
A: The interior of the pot is ceramic.   It's not possible to season it.  Seasoning is only for cast iron that is not covered with ceramic.  The only thing you must pay attention to is: wash it well.  And don't chip it --- which is not easily done.  OK?

Recommended by the New York Times' Wirecutter. So far it's been really great for a fraction of the price of a Le Creuset of similar size. It cooks well, and the sides are curved a bit more so it is easier to get roux off before it burns. My husband says that this one is made in China if that makes a difference (?). We'll see how long it lasts. I have a Le Creuset from the 1930's and it's still going strong. :)

### ⭐⭐⭐⭐⭐ Don't let bad reviews fool you - this is a durable pot

Got a little sketched out initially by people claiming their enamel was chipping but thankfully after getting mine I can chalk that up to people trying to get a refund for a pot they ruined. I've baked at 500, seared and simmered soup in this thing so far and it looks 100% as good as new. Super heavy and holds heat great. I do have criticisms - the bottom is a bit too rounded and shrinks the cooking area a bit too much for me - but the enamel isn't one of them and for $100, who cares? Don't use metal, buy a non-scratch sponge and use a plastic scraper for stubborn bits and this thing will give you a good life. Cannot reccomend enough for others like me who want a dutch oven that lasts but can't swing the $400 for LC. Also worth mentioning - for whatever reason the pot's colour gets way darker when it's hot. I don't know if that's intended but it always goes back to normal once it cools so I'm not stressed about it but be aware that's a thing that happens. Actually kinda handy so you know when it's dangerous to grab. Edit: A few months after writing this my pot sponatneously chipped while it was being preheated. I've been regularly baking bread in it requiring 500 degree temps for hours and was searing in it so I think it was thermal shock that did it. Contacted Lodge and they asked a few questions immediately offered to replace it - seems like as long as you don't admit to absolutely abusing the pot they're pretty happy to send you another one. I've had that one for about a year now and it's great. Again this is essentially a budget version of another product (LC) so I'm not expecting perfection and a lifetime of use, and the company offering to send me a new one at no charge is all I could really ask for. For stovetop use I still think this pot is absolutely 5 stars, but maybe avoid for bread baking unless that's the only thing you plan on using it for. I still use the old chipped one for baking and it's great for that. Overall a little disappointed at the lack of flexibility but in terms of value for price I'll still happily call this 5 stars.
