The flavor is distinctive; they are much more nutritious. This is an excellent product. High quality wheat. The food grade bucket will be valuable for future projects, and nearly air tight - no pests. I use a KitchenAid mill, which is slow, but can grind very fine (with 2 passes), or more coarse. I am still experimenting with sifting after the first pass, and then sifting to reduce bran content (for greater rise). Like many home bakers, I struggle between the nutrition of whole grain vs the aesthetics of bread flour. ### ⭐⭐⭐⭐⭐ Excellent wheat. Just for safety, we always check our wheat before milling and found no pebbles or foreign matters, with the only exception of a couple of pieces of chaff. The wheat sprouts well, too. Very good for bread making. We usually mix it with hard red and at times spelt for flavor, but it helps make the bread rise nicely and soft. I found the rest as advertised. Hard white wheat is a little tougher to grind than soft white wheat, but it is imperative for a good loaf of bread. This one surpassed my expectations. Plus, I love that it comes in a bucket! For ease of use don't forget to get yourself a gamma lid.
