It will repeat those tones on the way back down as it cools. (Did a simple test boiling water and cooling back down after turning off the heat.) **Q: How long is the probe?** A: It is pretty long, about 12". I don't use it frankly. It works well for some things, but I bought it for making candy. The clip is decent, better than some, but the digital readout is very difficult to read when it registers above 230 degrees F. **Q: Does it NEED minimum amount of liquid in the pan (2" or something) in order for it to work accurately ??
