So, after having these pans for a couple of months, I can say I'm extremely pleased by the quality of this set. I have now used them on gas, smoothtop electric, and induction cooktop's. They perform flawlessly on all three. Due to their multilayer construction, they heat evenly and quickly. Because of the high sheen surface, cleanup is almost as easy as on a nonstick surface. The lids also have a temperature indicator, (low medium and high). My primary cooking surface is a new induction cooktop and that's where these really shine. (I can boil a full cup of water in one of these pans in about 45 seconds and then immediately reduce the temperature to a simmer, you can't even do that with gas). At the price point I purchased these for on desertcart (less than $200) I believe they also represent an excellent value (I've seen individual pans at a higher price than this entire set). Also of note, their original advertised purchase price was quite a bit higher ($1709.00 American), and I mean no offense, but I think you'd have to be in the more money than brains department to purchase them or any set of pans at the price. I expected cleaning to be a little more difficult, but have no problem with a steel wool, everything that sticks comes clean without much effort. Love the look, very beautiful and shiny. Handles dont get hot, slightly warm. Measuring lines inside pots and pans pretty handy. Lids have thermostats on top of knob/ handle, very cool feature. The smaller pots are smaller around the bottom than the standard little burner - electric stove. Metal frying basket works great for deep frying. The bottoms are heavy and heat disperses evenly. I gave a gas range and use them on there. Just be aware the TOP of the handle is steel but there is a plastic liner on the bottom to leave the handles cool to the touch. If you have the flame up too high and it goes up the sides of the pot it WILL melt your handles. If you keep the temp right, the handles are great! **Q: Are these pans and lids oven safe, to what temperatures? Thank you!** A: Good question! I don't remember seeing anything in the literature that said they are oven safe. They have a plastic like insulating material on the handles that is quite heat resistant, but to what temperature I am not sure. With that said I absolutely love the set. I did notice a previous answer said they can only be used with electric stovetop, which is incorrect. They can be used on any Electric or Gas stove top (mine is an induction type and these things work great on it). **Q: Is this just stainless Steel or Surgical steel ?** A: Stainless Steel Alloys e.g., 300 series includes 303, 304, 316, 316L, 400 series, etc. consist of various elements including a high percentage of chromium. Stainless steel differs from carbon steel by the amount of chromium present..
