Those are cast-iron plates so, just like cast-iron pans, it will take a few minutes of waiting for them to get up to temp. For sure if you, on top, add a cast-iron pan... it will take a long time. I've had the best results with a ceramic-coated pan. The bigger side will be better for searing and boiling water. It will take min. 5 minutes to get to temp for searing a steak properly carmelized and about 10 min. for boiling water. That's how it's supposed to work; nothing about it is defective or underpowered. It's 10x times better than any electric spiral element. Review: Works great - This little double burner works great, used it for a couple of weeks while my oven/range was being worked on it it did the job really good. Was able to cook on it every day, various thing like spaghetti sauce, pork chops, mashed potatoes...etc. Heat output is more than adequate to cook pretty much anything. It's easy to setup and cleanup is quick and easy as well. It feels very strudy with the cast iron burners and the control knobs worked very well. Overall it seems to be very well made. I splurged on the Duxtop 9600 (BT 200 DZ) and it is awesome...a whole new way of cooking that is better than electric and gas (I enjoy cooking with gas as well, but not wild about the fumes). It also has a built in timer that turns off the burner when finished...a great feature... **Q: Is the low temperature low enough to keep a coffee pot warm without "cooking" the coffee?** A: I would doubt it...the only burners that do that are the ones that come with coffee machines. You are better off transferring your coffee to a good, insulated beverage carafe (pour hot water in first to warm it up) that holds the original temp without adding heat to it and hastening its deterioration... **Q: Does it give off a toxic smell (electrical burning?) or was the one review about this an isolated incident? Thanks!** A: Mine gave off the most horrible toxic electrical burning odor I've ever experienced. It stank up my whole apartment and I had to unplug it before I could even finish the "burn in".
