If you bought this from Amazon, as I did, then return the whole thing to Amazon (they provide labels and pay postage) and fill in the form as damaged with details of what's missing and they should organise the compay to send you a new one.

Q: Can these be joined together one on top of theother

They wont join together on top of each other.

Q: Can I not include the bottom one or two shelves in when building?

The shelves slide onto the legs and the clips go onto the grooves in the legs to hold them in place so it should be okay to leave one or two out.

Q: Are there larger sizes available? I have a space 60cm by 60cm

I regret to say that there are no larger sizes available for this SONGMICS Kitchen Shelf. You can buy two and put them together to build a larger one.
