I would not try filling the machine without a pipping bag/Ziploc; it would be difficult and messy. Because you fill the bottom and then close the machine to cook, the bottom side of every doughnut is browner than the top...not a big deal if you a frosting or coating them. The lifting fork that comes with the maker is important for getting them out, but it's so tiny I fear it going astray in my utensil drawer. Only real complaint is I wish the machine was larger, maybe a dozen doughnuts at a time. Most of the recipes we've made turn out 24+ doughnuts which equals at least four to five batches. The doughnut maker comes with a little fork that fits around the center of each doughnut which makes it simple to flip them over half way through. Wha-la. Done evenly on both sides. Simple. Great and easy doughnuts. I do oil my doughnut maker on top and bottom with coconut oil before filling each time. Nothing sticks then so cleanup is simply done by wiping with a paper towel and then wiping with a damp cloth. I also fill the doughnuts quickly by placing the mix in a quart bag with the end snipped off so I can quickly squeeze the mix into each spot half full. If you aren't quick and leave the mix you put in first a minute before the last one, you may burn one, but you don't have to be perfect squeezing the mix in, Just get it done quickly and get it closed and turn them quickly so all cook evenly.
