Open your tofu and drain the liquid. 3. Place the tofu the the middle part of the press (the box with the drainage holes). 4. Put the middle of the press on so that the coil or spring is securely in the both the bottom and middle holes. 5. Secure the lid. 6. Press for as long as you wish. And remember to drain the liquid at least once! The lid is VERY difficult to put on (unless you are super strong)! I'm not strong (let alone super strong), so here's what I did to get that lid on. I found that latching one side first then the other or pressing one side whle trying to latch the other were futile. So was talking to it. I ended up laying on it! Yup! Well, just my upper body ... That was enough weight to evenly press the top so that I could latch both sides. It's a great press.
