Nothing wrong with that and surplus oil can be drained off back into the container if you use a slotted spoon. You need the container to retain enough oil to submerge the remaining contents. The olives are supplied with a little widget to help keep them submerged. Make sure you replace it. Dress your salad with your own good quality olive oil. They will keep for months in the fridge as the rapeseed oil will protect them.
