Review: The Best! - Camellia is known as the best for a reason. Texas has an inexplicable grudge against dried cannellini beans, so I have to order them from desertcart like a savage. It’s baffling. These are normal, staple beans. Come on, H-E-B. Anyway, these are a decent price, are as “fresh” as fried beans can be, and they cook beautifully. I recommend an overnight soak in salted water before cooking, and adding a pinch of baking soda helps to soften the skin of the beans to make them creamier. Legend has it that this will also cause fewer farts. This legend has been busted, but the beans remain delicious.
