I’d sauté them in olive oil, add seasoning, but they still had very little flavor. You couldn’t use just a few tablespoons, as the rest would spoil. Then I discovered those curious aluminum toothpaste tubes of double or triple concentrated tomato paste from Italy. It only took a few tablespoons to add great depth and complexity to a soup, sauce, or stew, and one tube lasted a long time, as you could reseal it.I’ve been using a variety of concentrated tomato pastes, but not long ago I read that Mutti is the biggest selling brand of tomato paste in Italy. That means something, as Italy is a country where people take cooking and ingredients seriously. It’s a place where neighboring regions or cities can argue endlessly about whose version of ricotta is best, who invented tortellini, and whether the Neapolitans or the Romans make the best pizza. They should know a thing or two about tomato paste, and they do.This may well be the best tomato paste I have yet tried. I can’t say without buying half a dozen tubes and spending an afternoon tasting tomato paste, and I’m not going to do that.
