Review: I love these beans - Admittedly, I have only ever used these coffee beans to make my cold brewed iced coffee, so I can't attest to the experience when prepared hot. That being said, I originally tried this product because I was looking for decent priced coffee beans in bulk, and absolutely fell in love with the flavor. I'm in law enforcement, so I drink coffee like it's going out of style. I'm fickle about my coffee. I work 90+ hours a week, so coffee is basically breath to me. After partaking of the swill that ends up in the breakroom coffee pot, I reverted back to brewing my own at home, and with my multiple 16 hour shifts, cold brewing became my choice of brewing to have enough coffee to last me through my shifts. But... cold brewing gets expensive. It takes more grounds to seep and cold brew coffee than it does to make a simple pot of coffee. I discovered Don Pablo when I was searching for bulk beans. I fell in love after the first shipment. I've experienced a wide range of coffee styles. My Dad was a truck driver, I owned a restaurant, and I've worked for millionaire construction contractors. Three industries of "how's the coffee?". Don Pablo has been my go-to since I discovered it. The packaging is superb. I typically order a 5-pound bag of roasted whole beans that typically lasts me almost 2 months. The resealable bag keeps the beans as oily and glossy from the first day I open it to the last. It's all about the oils. If your beans are dry, you lost the game. The flavor is robust, yet very smooth, not overpowering or bitter. I grind the medium roast. I prefer medium roast when I brew hot, but the Don Pablo medium-dark is perfect for my cold brew. It's smooth, not brackish. I ran out of Don Pablo a while back. I bought a few bags of different roasts of beans from different stores, just to get by until my shipment arrived. The roasts I bought at the Box Stores were bland, dry, and had off-flavors. Now they're just sitting in my coffee cabinet, waiting for me to unload them when a fair-weather friend comes to visit and I can get rid of those subpar beans. I probably wouldn't write such an intricate review if it weren't for that fact that I drink Don Pablo every day and it's become a part of my day. Seven days a week. I cold-brew Don Pablo twice a week, to get me through a work week, that I drink over a 12-cup pot of it every day. Review: I was happily surprised that this is not cheap quality coffee. - Edit- May 28, 2020 After reviewing my desertcart Order history, I saw that this month is the 3 year anniversary from our first purchase of Don Pablo coffee beans. We have been enjoying the delicious medium-dark roast of their Signature Blend exclusively for three years now. The beans always arrive very fresh and aromatic. They are a rich dark roast that is not over roasted and burnt (as in the *bucks beans). We use a Saeco super-automatic machine and the Don Pablo beans are not oily at all and they work very well with the machine. Not many products can continue to be produced for years maintaining excellent quality, but Don Pablo does it on every single order. EDIT 1- May 2018: As this is part of my Prime Subscription, I have now received Don Pablo beans for about a year. All I can say is that this is the best coffee for the $ you can buy. I've had a lot of other beans that are 3 or 4 times the price, but they sure are not 3 or 4 times the quality. These beans are very tasty and when you go through a lot of coffee, they won't require a bank loan to pay for them. Original Review: I'm not sure what I expected when ordering some really cheap coffee. But I was happily surprised that this is not cheapo convenience store battery acid coffee. This is a nice medium body coffee with great aroma and very low acid. It makes a fine cup of coffee or lighter espresso. For the money, you would be hard pressed to find a better coffee bean.

**Q: Is this coffee good for French pressing?**
A: Hi Paul, thanks for reaching out.  Many people enjoy this coffee in a French Press.  The key is not to pour water on the grounds while it is still boiling.  Bring the water to a boil, but then let it sit for a while until it reaches around 185 - 190 degrees, then pour it in.  Otherwise you will scald the coffee and rob it of its flavor.  It's important to get the grind right also, and for best results, you want a grind fine enough to get some flavor from the coffee, but coarse enough so the coffee does not pass through the screen.  I personally prefer the hand drip method (pour over), as it gets more flavor out of the coffee without imparting the flavor of spent grounds (at least that's how I perceive it).  Hope this helps. **Q: Not sure how to store the beans.   I have heard; freeze, refrigerate, don't refrigerate.  What do the experts suggest?**
A: We recommend an airtight canister in a cabinet or on the counter, never in the fridge or the freezer.  If you Google it, you will find chemists and molecular biologists arguing about which is the best method, but we've just tested it ourselves over several years and have determined that the coffee tastes better longer if you don't refrigerate or freeze it.  Because we roast to order and customers often receive the coffee while it is still developing (oil rising to the surface of the bean, the freezer will stop that process and dry the coffee out, and the refrigerator has a lot of moisture, and that is not good for coffee.  Occasionally we will get a complaint about coffee quality, and after we determine it is not a problem with grind/preparation, we ask how the coffee has been stored, and often it has been in the refrigerator.  We're not snobs, and if the coffee tastes great to you, that's all we care about.  Our bags for personal use are sitting out on the counter or in a cabinet, rolled down at the top and secured with the tin tie, and that works just fine for us. ### ⭐⭐⭐⭐ Great Coffee After Some Tinkering

For the price, I figured why not give it a try. At first, I didn't like it too much. I really wanted to, as I'm tired of paying out the nose for good coffee beans. After I figured out that you need a COOLER temperature of your water for darker roasts, letting it get down to 180-190, this coffee tasted MUCH better. If you get the signature blend, make sure you are letting your water cool longer than a normal medium roast. The coffee itself should have notes of caramel, chocolate, and earthiness when you make it correctly. If your water is too hot (like mine was at first), it'll taste TOO earthy, little like dirt. Sometimes a little adjustment of your brewing variables can go a long way. That is why I use a french press, so that I can adjust any variable I need to (over a drip machine). What I do to make this coffee awesome (16 oz cup of coffee): - A pot of a little over 2 cups of water goes on to boil. - Grind 4 heaping TBSP of beans. - Once the water is at a boil, I pour a bit into my press to heat it up a bit. - I cool the water for 1 min and 30 seconds with the lid off of the kettle (yeah, not super precise but that time works for me). - Dump french press of pre-heating water, dump in grounds. - Pour water over grounds. Doesn't matter if they all get wet at this point, and doesn't seem to matter if I pour slowly or fast. Keep things simple. - Set timer for 4 minutes. - Stir grounds gently for 30 seconds (this will ensure that all of the grounds get wet). - Once 4 minutes are up, slowly plunge (should take 20-30 seconds to get to the bottom). - Pour into into cup right away. TIP ON NO SLUDGE IN YOUR COFFEE: Don't pour in all of the liquid. That's it. Everybody seems to have a different method for reducing sludge. Plunge slowly, and don't pout in all of the liquid. Some people say don't drink your last sip, some people say spoon off some grounds before you plunge (messy), just do as I say and resist the urge to put ALL of the liquid in your cup. The grounds like to sink to the bottom of the coffee liquid, so just leave them in the french press where they belong.
