(I'm noticing mixed reports.)** A: Hi Denise, Although we do recommend hand washing and drying the knives, they are made to be dishwasher safe and should not rust after extended use even if only cleaned in the dishwasher. The reason that we recommend hand washing the knives specifically is that that the knife's blade is 420 stainless steel instead of the 18/10 steel used in the rest of the utensils. Although they are dishwasher safe, the knives should not be left in water for prolonged periods of time or in the dishwasher overnight. Immediately hand drying with a towel is also recommended. Also, it is strongly advised that you do not use dishwashing detergent or handwashing soap that contains vinegar, lemon extract/oil, or citric acid when washing the knives. The knife blade is made of 420 stainless steel, this higher carbon stainless steel is used because of its superior hardness and edge retention. The 18/10 stainless steel is too soft to retain a sharp cutting edge and becomes dull very quickly. For this reason, 420 stainless steel is used for the knife's blade. It is the gold standard for cutlery blades and used in nearly all high-end flatware knives. The downside of 420 stainless steel is that it is not as rust or corrosion resistant as 18/10 stainless steel, for this reason, we recommend handwashing the knives and drying them after. It is possible, but very rare, for 420 stainless steel to rust if acidic dishwashing detergent is used and the knives are constantly left in the dishwasher overnight or water for extended periods of time.
