It is produced by grinding cashews until a smooth paste is formed. Also great for thickening sauces and curries. It is typically a little runnier than blanched almond paste and readily combines with other ingredients in any recipe. The protein to carbohydrate ratio makes cashew paste an appealing snack option if you're trying to adhere to a low-carbohydrate, high-protein diet as well as being suitable for many types of gluten/grain free diets. Cashews are not actually nuts but the seeds of the cashew tree, known scientifically as Anacardium occidentale. These seeds, encased in shells that are removed before processing, adhere to the base of the cashew apple, which is the tree’s fruit. Rich in healthy monounsaturated fats and essential minerals, cashews also offer a number of health benefits. I've tried other raw cashew pastes and their consistencies are spreadable - this one is rather clumpy. Having asked if I could return the product, the team completely disregarded my question ENTIRELY and gave me an automated list of recipes in which to use their product with, with links that didn't even work. From their POV, it seems this is a good product if you'd rather not bother soaking and blending cashews yourself - but for this extortionate price, you may as well do it yourself, and have a better produce at the end. I tried to use this in houmous, and in general baking, and the results were just so gummy.In summary: TERRIBLE customer service, and not a great substitute for baking either.
