I bought this knife for my son who only eats raw vegetables and chicken that is never frozen. He used this knife to cut vegetables only and washed it by hand; Before one week was out, the blade was chipped. In contacting the Shun knife warranty office, I learned that we would have to pay shipping to and from the company; plus they were not guaranteeing that they would replace the knife or repair it. The consumer line was off-putting and not concerned that the knife failed within one week.

    Scary Sharp

First of all, I sharpen all of my knives (60+) and usually get them appropriately sharp for the job/task that they are designed for.  I have used Spyderco's Tri-Angle Sharpmaker for years and have sharpened well over 100 knives with it (friends and acquaintance's).  So, although I'm not an 'expert' knife sharpener, I do know a thing or two about how sharp something needs to be.  The usual 'RAZOR SHARP' that's applied to everything today is so over-abused, that using it here is meaningless.  I say all of this to try and make a point with how sharp this knife came from the factory.  This knife is so sharp that I handle it and treat it as if it's a loaded firearm: i.e.: with tremendous respect!  ALWAYS keep your eye on that blade!  It is almost unbelievable how well this thing cuts through vegetables, meat, tendons, etc!  It is almost effortless.  I will not attempt bone, nor would I recommend it and this knife isn't made for that.  However, with everyday cutting, it is ridiculous!  I cannot 're-sharpen' it because of its very acute angle (the Spyderco can only sharpen blades 20, 30 and 11 degrees--the last one being for scissor blades) and this 10" Shun blade is something like 25 degrees or so.  This shouldn't matter because Kershaw--the parent company to Shun--should be able to resharpen it when needed.  The ergonomics are outstanding.  The build quality at this price point is outstanding.  Plus, it looks beautiful and gets a lot of people's attention.

    This knife is EXTREMELY fragile!

I LOVE this knife... and wish I had never bought it. It is a dream to hold, and it almost rock-chops and slices on autopilot. But I store and handle it very carefully and somehow I have a very small knick in the blade after only several weeks of use. I intend to baby it as best I can, and love it while it lasts, in spite of its fragility issues.
