Product Description We may be new to you, but we’ve been around a while! With a milling legacy spanning eight generations, Matthews Cotswold Flour is one of the UK’s oldest family-run flour mills. Trading grain and milling flour in the heart of the Cotswolds since the 1800s, we’re proud to offer premium quality Organic and Stoneground Wholegrain flour, using grain from local farmers and traditional milling techniques. We supply predominately small, professional, artisan bakers all over the UK including 3 out of the last BIA bakers of the year. We mill using traditional stoneground methods and roller for premium bakers’ white flours. We source and blend our 8 types of grain from our local Cotswold Grain Partnership to create award winning bread, wholegrain, culinary, pastry and speciality flour blends. The Matthews Cotswold Flour story began when the original FWP (Frederick) Matthews built a mill on the river Evenlode in 1912. You’ll find us working here to this day, overlooking the picturesque Cotswold village of Shipton-Under-Wychwood. It’s where we mill, pack and ship every order to your door. - WINDRUSH. Windrush is strong white bread flour perfect for everyday bread baking in the bakery or kitchen. Milled using exclusively premium high protein group 1 wheat and used by bakers all over the UK due to its consistent reliable performance.
- MILLING & GRAIN PROVENANCE. Each year at harvest all the different varieties of group 1 milling wheat are tested as soon as they come off the field. These varieties are then tested in our flour lab to access their protein strength, protein quality among a number of other tests. Our Windrush flour is only milled from varieties wheat that reach the top 10% of the criteria for bread baking quality.
- PERFECT FOR. Bread, artisan breads, rolls, tinned loafs, bread baps, garlic bread, banana bread, wheat bread, homemade bread, yeasted rolls, country white bread.
- TOP TIP. 1: Blend with our Wychwood or Canadian bread flour to boost protein for open texture white breads. 2: Blend into wholemeal bread recipes for a lighter loaf.

This is excellent bread flour ………the only problem is I’m still learning to make bread and have yet to make a loaf or rolls that I’m 100% happy with, I guess it’s a case of practice makes perfect!! i I stress it’s not the flour, I’ll be happy to do a further review when I’ve perfected the art of bread making.
