High quality, flavorful medium grain rice Review: Perfect sushi rice for instant pot/pressure cooker! - Great!! I've been making it in my instant pot. 2 cups of rice (throughly rinsed, several times in cold water), 2 cups (minus 2 Tablespoons) of water. Put in the instant pot for 6 min. After that's over, leave the instant pot on warming, and natural release (wait) another 9 min before releasing the rest of the pressure and opening. Then fold in 1/4 cup sugar and 1/4 cup white vinegar and a bit of salt with one hand, and fan the rice with the other hand. Perfectt sushi rice!!
