They’re soft but still have a nice chew to them, thinner than what I’m used to most udon noodles being, but I find I really like that when it comes to stir-frying. They also hold on to sauce really well, and when used in broth, they’re easy on the stomach. They’re tied in portions, which I find super convenient for serving sizes, and grouping them together seems to keep them from being tossed around and broken. I’ve ordered multiple times and never had any broken bundles, disregarding the odd end piece. While easy to make, I have to insist on rinsing once they’re done boiling - to keep them from getting too soft and to make sure they’re not too salty.
