A frozen entremet pops out of this mold very easily, and I really like the rounded edges of the resulting entremet's shape. I knocked off a star because I'm not sure if the mold is supposed to hold completely together while the entremet sets up in the freezer. Whenever I've used it, I think the entremet expands a bit while freezing and separates the two pieces of the mold slightly, allowing mousse to fill into the space. The result is a ridge along the edge; otherwise the entremet would be entirely smooth. I later manually smooth out the ridge with a heated spatula for mirror glazing--I don't know if this ridge actually affects the uniformity of the mirror glaze but I always smoothed the ridge out before in case.
