## Questions & Answers

**Q: Does it list an expiration date?**
A: There is a stamp on the bottom.  The one I got expires in 2021.  I have only tried this product once and so far the results were not super, but there are really no instructions and I may have not used enough.

**Q: I have celiac disease and use gf caputo flour to make pizza. does anyone use this yeast to make pizza with gf caputo flour?**
A: Yes I do every time

**Q: Is this more like active dry yeast or instant yeast?**
A: It is in fact instant yeast - at least as that is defined in Europe, the UK and Australia, which is yeast that can be added directly to dry ingredients without pre-activating in water.  Instructions in both English and Italian  both say to mix it into the flour.

**Q: Pizza making class asks for beer yeast. Would this be the same?**
A: “Beer yeast” is very non-specific. If you look up your local home brew supplier, they’ll probably have 10+ options. Not sure exactly what properties your instructor would be looking for.

This Caputo yeast is excellent for making pizza, particularly if you are attempting a Neapolitan style, and will be allowing the dough to cold ferment in your fridge for a few days to develop better flavor.
