When fully cooked it has a creamy texture (not anything gritty or granular, which some people who enjoy "fresh pasta" may be looking for). It really comes down to the sauce. Therefore this is an excellent base for your sauce. cooking time is standard but this kind of pasta (Rotelli, Rotini, or Fusilli) is more forgiving than spaghetti as far as timing it "just right" and even holds up well as leftovers.
