Yes they are smaller than regular baby back ribs, but they are supposed to be and they are tender and flavorful when cooked properly. You cannot make them the same as regular ribs. We purchased 18 racks to splurge for a party and that is a big splurge. They used to come in a styrofoam container and were always frozen solid on arrival. Now they come in a thin cooler type bag in a cardboard box. I was shocked that the box didn’t indicate it was perishable. They arrived completely thawed and warm so we could not eat them due to safety concerns. I called, they apologized and said they were trying to figure out how much dry ice to use in the new packaging. They sent another 18 racks right away which was great. But the 2nd batch also was thawed, although still very cold so we could at least refreeze them. We never refreeze thawed meat as it really affects the quality but what choice did we have. I called again to let them know. He said they added 50 lbs of dry ice. There was none left in the box. I’m not sure how they could have added that much dry ice to the box that barely fit the ribs but who am I to argue. He said he would talk to the owner and call back. Two weeks later and we’re still waiting for that call. Very unhappy that we have to serve re-frozen ribs to our guests but more disappointed in the customer service or lack thereof. I still would highly recommend the Danish ribs. I just wouldn’t order from Gourmet South Meat Market unless you live close to them.
