This is an excellent knife, comes reasonably sharp out of the box and will take a razor edge with a little stropping.  Very good fit and finish.  Choil and back have been eased very slightly out of the box, but can definitely stand for some more.  This is a bargain knife, perhaps the least expensive high speed steel kitchen knife on the market.

料理が趣味で、時間があれば毎日夕食を作っています。男は格好から入るので、こだわりの包丁を約２年ほど使っていましたが、評判ほどの切れ味ではなく、かなりストレスでした。使っていたのは、某番組で放送もしていたほどの有名な包丁で、ダマスカス模様にもこだわった、両刃の一品でしたが切れ味は決して満足のいくものではありませんでした。ネットで、製造元のこだわりや、各レビューや、包丁比較サイトをかなり調べてこの商品に決めました。とにかく切れます。持ったときのクオリティの高さも最高です。今まで何本も包丁を使いましたが、まったく別の切れ味でした。また三徳ではなく牛刀にしたのも正解で、刺身もストレスなく切れます。両刃の持ち味の垂直切りも最高で、人参や大根も割れないで綺麗に切れます。あと、握った時の感触の良さと、重さのバランスも最高でした。
