Don't make mayonnaise if there is a thunder storm in the forecast that day, it won't emulsify. The 4 steps I have followed successfully are: Step 1: place eggs, oil and spices into large blender with blades. Blend on high till thoroughly combined, using a small scraper to get any spices that stuck to the side incorporated into the mixture. Step 2: slowly blend half the oil in a trickle into the egg mixture. To do this without making a huge mess in the kitchen, I drape a dish towel over my pouring hand, place the tip of a measuring cup with the oil into the spout opening, fold the spout cover down as far as it will go, cover the whole business with the towel, and slowly pour a small stream the size of a pencil into the pitcher while blending on Dough or Crush (low or medium). You can slow down if you think it will help but I haven't found it to be very fussy about how quickly I add the oil. It will begin to wobble the machine once the emulsion occurs, and you may need to hold the base or lock it to the counter to stabilize the machine. Turn off, scrape down, repeat if the sides are covered with oil. Step 3. Dump in the acid (vinegar or lemon juice) and blend all at once quickly, scrape down sides, then blend again. Emulsion will be slightly looser after adding vinegar, but still thickened. Step 4: As in Step 2, trickle in the remaining portion of oil on medium (crush) speed, and expect the wobble and strain of the increased thickness of the emulsion till all the oil is blended in. Scrape down. The resulting product may be much more runny than you expect compared to a commercial mayonnaise out of a store bought jar. Every single time I use it, it makes a burning rubber smell. I have a feeling it will not last long. The rubber sealers in the base, have already come out.
