Sumac is quite unique and hard to replace with one ingredient. But you can substitute it by mixing lemon juice and lemon zest with a little kosher salt, vinegar, or tamarind.

A: Adding any flavor to food will help reduce the need for salt. Sumac is not salty so much as sour, in a delicious way. I love adding it to my dishes. It's definitely worth a try. My best idea for substituting salt are coconut aminos. They taste good and have significantly lower sodium than adding salt, but they are not sodium free.
