I opened this thing up because the controls aren't very accurate, and the dial design is "misleading". In other words, the heat knob can be turned up from "off" to half way before the element ever starts heating. It CAN then be dialed back a bit, but there's not a good way to know if it actually IS heating. The reason the heating accuracy isn't that good is because the circuitry for that portion is EXTREMELY simple. Essentially works like a light dimmer. **Q: Will this heat without stirring, and stir without heating ?** A: The answer is yes to both. It can stir without heating and heat without stirring as they both have individual controls **Q: does it rotate clockwise or counter clockwise?** A: Rotates clockwise **Q: Will this hold a tempature between 200-220 without going over or below?** A: It's extremely difficult to dial in a specific temperature. The circuitry which controls the heat is essentially like a light dimmer, and there's really no way to know what you have it set to.
